        I have always loved to cook. Being in the kitchen when I was younger-      watching and always wanting to help but being Italian didn't always bring "healthy or clean eating" to the table - yummy foods but not so healthy. Since I have gotten many recipes from Mindy - I am having so much fun in the kitchen cooking and knowing that I am bringing healthy clean meals to my family!...In the Speer Family, we have a Mindy Kapit favorite!! Chicken Cacciatore! The first time I made it, I had my parents over. Knowing it is one of my parent's favorite meals - I was excited to make it.  I can't begin to tell you how much everyone loved it! Seconds went to every plate! Now, it's one of the most requested meals everyone asks for! Even my four year old!!! Mindy, I can not thank you enough for the unbelievably yummy recipes!!!! Your
energetic personality and love for cooking clean is truly inspiring!!! You are the best!!

I just wanted to thank Mindy so much for teaching me a new way to cook! Her dishes are easy to prepare, healthy, and delicious! I started to do this because I wanted to lose weight and I lost 10 pounds in the first 2 weeks but now I see that this is not a diet, it is going to be a whole new lifestyle for my family. I feel good now when I cook because I know I am giving them something wholesome and delicious! I cooked for my parents and in-laws the other night and they raved about my chicken with cashews! It was fun because I didn't tell them it was clean cooking! When I did, they could not believe it! So, Mindy, just wanted to say thanks so much! The cooking classes were fun and informative and it has been the best plan to lose weight and feel good for me that I have ever made! Keep up your good work and I will be buying more recipes soon!

The 4-week Classes Are Perfect!


I (that's me on the far left) cannot tell you how much I enjoyed taking your cooking clean classes! After being in a cooking rut for a while, I'm happy to be back in the kitchen with some new recipes and loving it! My husband loved all of the dishes and my in-laws are missing coming over for dinner every Tuesday night! I make my husband the Garbanzo salad to take to work and he munches on it for a few days, it's one of those dishes that just gets better with age! Our other favorite is the two bean soup with spinach, YUMMY! Actually just finished leftovers of that for lunch today. Some friends of ours recently went on a charter boat and gave us some of the fish they caught, I made the herbed tilapia recipe and it was delicious! My eight year old would never eat the chili that I USED to make, I had him try a bite of the recipe from the class and he has finished his bowl both times I have made it. Can't say enough about these recipes, and want to thank you for opening my eyes to cooking clean!

One Fabulous Friday Night

One amazing cook, 15 girlfriends and tons of fun on a Friday night.  I've known Mindy for over ten years, have eaten many amazing meals at her house and over the years she's even cooked wonderful meals in my kitchen.  So on Friday night I was excited to invite my friends over and have Mindy show us some of her recipes and clean eating tips.  The girls in Boca were all excited and eager to participate and learn different tricks and recipes to make for all their families.  Mindy explained many of her techniques and walked us through several of her amazing recipes.  She taught many of us simple solutions to make our time in the kitchen more productive and efficient.  We all were able to sample her delicious dishes and take home the recipes.  We had so many laughs and such an amazing evening that everyone called me the next morning to make sure they would be included when Mindy comes back.  Having Mindy to your home to teach your friends clean eating is not only informative, it's tons of fun!!!

As a marathoner (pictured left at NYC Marathon), triathlete and a mother of two young active boys, I’ve always been into healthy living including exercise and eating.  I knew what to eat and when but I shied away from cooking meals and generally ate a salad for dinner every night.  I was afraid to even attempt to cook because I didn’t know what flavors to add, food items to put together and most importantly what was healthy for me.  

I decided it was time to face my fears and learn to cook!  What better way to learn to cook healthy meals than to invite Mindy Kapit from I Cook Clean into your kitchen.  The second I hired Mindy, she was in constant contact with me. After giving her the dishes I wanted to cook and with some encouragement to try new foods (I was going to grow feathers b/c everything I chose was in some form of chicken), she gave me a detailed shopping list and revamped some of the ingredients due to my dislikes.  Mindy was available at all times by phone and boy did I call often when I went food shopping.  When she arrived at my house, I was very nervous as I had never cooked ‘real meals’ before.  She explained the reasons certain foods were used and other ways to cut fat out of my meals without losing flavor.  I found the wealth of information she gave me that day more valuable than the little amount of money I spent to have her come to my house.  I cooked so many meals that day that I was able to have my entire family over to test out my new creations.  I couldn’t get over the flavor of the meals and how many people went back for seconds.  

NO GUILT!

I didn’t feel guilty eating any of the meals because I knew they were all healthy and good for my insides.  I recommend to anyone who has or hasn’t ever cooked, to hire Mindy and put your money where your mouth is!!!!  Thanks Mindy, I love the meals and now look at poblano peppers as my friends!!!!

I love Mindy.  She has introduced me to some fabulous tricks for cooking. Her recipes are so satisfying and easy to prepare.   They seem to have just the right balance and as a result I feel comfortably full and satisfied after each meal. She has introduced me to different pastas and carbs that I am loving!  She is extremely knowledgeable and energetic and if you look at her you want to borrow her figure. “amazing”.  I would call her today. :)

I met Mindy more than a decade ago.  When I first met Mindy, instantly, I sensed a really genuine, warm and loving young lady who was seriously dating a smart, terrific guy, Jason.  Mindy was simply beautiful in a petite, thin, frame about to be Mrs. Kapit.    We shared a mutual fondness and liked each other from the beginning, sharing similar interests, especially in FOOD and EXERCISE.

Over the years I have seen Mindy's body transform into a work of art:  defined muscles and overall great symmetry to her sexy 40 year old body that just doesn't happen overnight, not to mention her beautiful skin and her gorgeous shiny hair.

Mindy is an excellent cook!   Having been her Personal Trainer and friend for over 7 years, I can undoubtedly say she also has an incredible knowledge of Nutrition, Fitness  and how to implement a Healthy Lifestyle.  

Most people don't grasp the understanding of "eating clean" as there is a major difference between "eating healthy", and "eating for fitness" (fat loss, muscle toning, etc.).  Mindy "GETS IT", and she has a great way of teaching it through her cooking.

She has tons of tips and tricks to make healthy food taste delicious, fresh, and enjoyable!  Most people fail to get results and lose weight because they can't stay on a healthy nutrition plan for too long.  Why?????  Because they cannot maintain the "diet", they are usually comprised of bland and boring foods.  Most people end up binging because they feel deprived eating these bland and boring "healthy meals".  Mindy does the extreme opposite, she makes healthy meals that are optimal for losing fat and getting fit, but most importantly they are delicious and easy to make.

Mindy has taught several Healthy Cooking Classes with myself at the Studio I work out of (BB3 Nutrition and Performance Center).  People always love her and appreciate her expertise in the cooking and health area. 

She has made me countless delicious and healthy meals, so I can tell you myself, SHE IS GREAT!!!!!  Even a professional chef could benefit from a HEALTHY COOKING CLASS with Mindy!

I have always been amazed by Mindy’s cooking.  I have watched her many times in awe as she has created healthy delicious looking meals for her whole family.  She certainly has a knack for turning what could be an ordinary dish into a spectacular “clean” treat!  Her knowledge of what to substitute and/or add to make these creations diet friendly is what has always been so outstanding to me.  

Mindy is a testament to herself.  Just look at her.  She is a person who enjoys food just as much as you and I, but knows how to to prepare it in a way that is well balanced!!   I was most amazed the night she made a “clean” Mexican fiesta for my family.  From her fresh corn salsa to the amazing fajitas, not only was each dish gorgeous to look at, my whole family raved about how good it tasted. 

Even the salad she made for the adults at her son’s 8th birthday party was a hit.  As a matter of fact, everything that I have ever tasted made by her has been a “10”. Whatever type of occasion you need a menu for, Mindy has the knowledge to make it an incredible, exquisite event!!

As recently as yesterday, I actually said to Mindy....."I should just hang a picture of you on my refrigerator......" This was not the first time that I have uttered these words to Mindy.  During our friendship of the past eight years, Mindy has taught me that eating clean is the ONLY way to eat.......period.  It really and truly comes down to time management. We are all so busy in our everyday chaotic lives-----but Mindy has taught me that by taking a few minutes to PLAN....it.will save me from making the wrong choices day after day and meal after meal. 

I have done the supermarket tour---which is life changing and an integral part of understanding why the shortcuts, diets, and frozen meals are not the way to go for long term satisfaction. I was the one who thought the grilled chicken breast and vegetable was the only way to go! I have learned to take out my recipes on Sunday, plan my week, make a list and COOK. It is so easy. I have been fortunate to dine at the Kapit home many times throughout the past years. It is always delicious, always fulfilling, always beautifully served and always CLEAN!!!!

The reasons I should hang a picture of Mindy on my refrigerator are beyond the obvious....it also would serve as a reminder of the amazing life-changing lessons that she has shared with me over the years which are now instilled in my memory.
